Avocado Toast (with homemade whole wheat bread)

I have been craving avocado toast for a while. When that craving hit again last night, it was way too late for going to any reputable bakery to buy bread. So I had this crazy idea to start making my own bread at 10pm at night. I got the highest rated whole wheat bread recipe from AllRecipe.com and subbed out some ingredients and skipped some steps (which I was sure isn’t completely necessary) to save time. And 3 hours later, at 1am, I had a loaf of decent whole wheat bread.

Come this morning, my bread was cooled on the rack and ready to be sliced and made into my much craved avocado toast. It was quite a treat with a cup of freshly made soy latte. and probably going to motivate me to wake up early and have some decent breakfast from now on.

  1. Put all ingredients except for the seeds in the stand mixed. Use the paddle first, then switch to a dough hook when it gets too dry and beat for 10 minutes. The dough should be form a ball that pulls away from the side of the bowl, but still sticky to the touch. So add soy milk/whole wheat flour accordingly.
  2. Pull the dough out and form it to a smooth ball by hand.
  3. Oil a big bowl and put the dough ball in. Cover the bowl with a damp paper towel and put it in a warm place to proof until the dough doubles in size. (40 min - 1 hr)
  4. Punch down the dough. Grease a 9x12 loaf pan and put the dough in. (I cut the dough in half and form each half to a ball and put them in side by side to form a double bump)
  5. Cover the loaf pan with damp paper towel and proof it on the counter for 1 hr until the dough coms up above the side of the pan.
  6. Preheat the oven to 350F.
  7. (Optional) Right before baking, brush egg wash (1 egg with 1 tbsp water beaten together) gently on top and sprinkle with oats/sesame/whatever you see fits.
  8. Bake for 25-30 min. To test if baked through, tap the bread and it should sound hollow.
  9. Leave on a rack to cool. 

Whole wheat bread

  • 1 1/2 cup whole wheat flour
  • 1 cup bread flour
  • 1 packet dry active yeast
  • 1 1/2 cup warm soy milk (Original recipe calls for warm water)
  • 1 tbsp olive oil (Original recipe calls for melted butter)
  • 2 tbsp honey
  • 1 tsp salt
  • (Optional) 1/4 cup pumpkin seeds
  • (Optional) 1 tbsp chia seeds

 

 

 

 
  1. Toast the bread in the toaster.
  2. While the bread is toasting, cut the avocado in half and use a fork to smush each part.
  3. Scoop out each half of the avocado onto each slice of toasted bread.
  4. Salt and pepper to taste.
  5. Drizzle with olive oil.

  • extra virgin olive oil
