Coconut Mango Ovenight Oats

I used to have overnight oats all the time, especially during summer. But since winter rolled around, I found myself steering towards warm breakfast more and more. Luckily, the temperature is picking up slowly recently. Even though it's still no where near summer, I started to miss the cold refreshing overnight oats that I use to have with fresh fruit. So I decided to make one with some fresh mangos I got from Costco and coconut flakes. It made me crave for a tropical vacation.

For the liquids of my overnight oats, I like to use a mixture of equal parts greek yogurt and soy milk. But depending on the consistency of your yogurt, you might want to adjust the amount of soy milk. The consistency of the final product after mixing everything together should resemble a cake batter instead of cookie dough if that makes sense :)

I also like to add a spoonful of chia seeds. It adds a nice texture when it's soaked up with the liquid and it's supposedly packed with nutrition.

I usually eat the overnight oats as a pre-workout meal.

Instructions

  1. Mix together the yogurt and  soy milk
  2. Add in the rest of the ingredients and mix well
  3. Seal the container and leave in the fridge overnight
  4. Enjoy in the morning

  • 1/4 cup rolled oats
  • 1/4 cup greek yogurt
  • 1/4 cup soy milk
  • 1 tbsp chia seeds
  • 1/4 cup cubed mangos
  • 1/4 cup flaked coconut
