Whole Wheat Gnocchi

I'm craving something that's comforting as well as somewhat healthy, so I came up with the idea of making some whole wheat gnocchi. It's the first time I made gnocchi. It actually came out pretty decent! Although using whole wheat instead of all purpose flour made the texture a bit rougher. I'd say the gnocchi itself doesn't taste as good as regular gnocchi, but hey it's the things we do for health I guess. With the various sauce, they did make for a pretty versatile and satisfying lunch, and they are great for meal prep.

Carrot and Kale Salad

I saw this recipe from Everyday Food and thought it's great for bringing to lunch. I made some small adjustments to suit my pantry supplies better. For instance, I subbed hemp seeds with chia seeds simply because I already have a big bag of it. I also subbed lemon juice with sherry vinegar because it provides good flavor and acidity and most importantly I don't need to go buy a bag of lemon that I know the majority of them would end up rotting in my fridge...
